CRYOLOG’s Time Temperature Integrators (TTI) are biological tracers whose active elements are food grade microorganisms.

Their behaviour in terms of reaction to the time/temperature profile variations is like the one of the bacteria in the fresh and ultra-fresh foodstuffs.

They biologically trace these variations whose impact is signaled by a simple and universal colour code : red or green.

The TTI contains a gel made of a nutritive medium and a dyed indicator, which gives its green initial color. Lactic acid bacteria are inoculated in the label according to the specifications of the foodstuff to be traced. Then, the label is frozen until it is actived by thawing and stuck on the fresh products.

Depending on the time/temperature profile experienced by the foodstuff and the label, the bacteria confined in (eO)® grow more or less quickly, just as the bacteria in the foodstuff do.

In the label, the bacteria use the carbon source of te medium, for example the glucose, to carry out their growth, and they release lactic acid.

As a result, the pH of the medium decreases more or less quickly according to the time/temperature profile and the dyed indicator turns from green to red, thereby signaling that the foodstuff has run out of its time/temperature capital.
