Time Temperature Integrators


Time Temperature Integrators (or TTI)
are simple and affordable devices that signal, by a visible, easily measurable and irreversible change, the impact of the time/temperature profile on the product on which they are stuck (Taoukis & Labuza, 1989).


The accumulated “time/temperature” history of the traced products is interpreted at each moment of the cold chain, which allows to show “the freshness status” of the product (Taoukis et al., 1999).


The product to be traced should have a standardized and satisfactory intrinsic quality for the TTI to trace properly the spoiling history.
 

Traceability by microbiology

The technology developed by CRYOLOG is based on a simple principle : as the nature of foodstuff spoiling is microbiological, the spoiling indicator must also be microbiological.
