TRACEO® is based on a patented technology that is unique in the world:  the use of micro-organisms to simulate the real deterioration of products.

Fresh food products degrade over time at a rate that depends on temperature, due to the development of micro-organisms that are naturally present in products. Respect for storage temperatures slows down the development of microbial flora. Inversely, an abnormal and prolonged rise in temperature accelerates the development process of micro-organisms.

Microbiology can therefore be used to track what is really happening inside a food product in as precise a way as possible. TRACEO® simulates the development of the micro-organisms responsible for the product's deterioration.
